We don’t know about you, but salad is a pretty big part of our eating repertoire. We are not talking about iceberg lettuce doused in Catalina or Hidden Valley Ranch. To us, salads give main character energy, especially when the dressing is made with love.
Most people don’t realize how easy and fast it is to make a fabulous salad dressing. When you start with the highest quality ingredients, you truly do not need many of them. A basic vinaigrette can be as simple as oil and vinegar (and on some days, that’s it!). But when we have 3 minutes, we add dijon mustard and maple syrup to our vinegar (our favourite is white balsamic), season with a little salt and pepper, and slowly drizzle in the best olive oil we’ve got. The dijon emulsifies the dressing, which is a fancy way of saying blends, and it’s also just delicious. Vinaigrette is the time to use your very best olive oil… the one that comes from the fancy store or the fabulous gift basket (like ours, ahem). In this case, less is more!
